My neighbour brought me a trout out of the local loch, so I fillited it, cured it, smoked it in the cobb, then made a tasty horseradhisy potato salad with it. Here's my recipe:
Serves 2 (light meal / big starter)
Ingredients
- 400g new potatoes
- 2 tablespoons greek yoghurt
- 1.5 tablespoons horseradish
- Juice of half a lemon
- Bunch of parsley
- 3 spring onions
- 100g hot smoked trout (Mackrel will probably do?)
Method
- Cook the spuds.
- Mix 2 tablespoons of greek yoghurt, 1.5 tablespoons of horseradish, juice of half a lemon.
- Once the potatoes have cooled, mix the dressing with the potatoes.
- Chop up 3 spring onions and a bunch of parsely and add to the bowl.
- Flake in the trout.
- Season
And you're done. Plate it up and eat it.
